Blueberry Muffins

serves 4

Blueberry Muffins
1.5 cups flour
1/2 cups sugar
2 tsp baking powder
1/2 tsp salt
1/4 cup oil
1 egg
1/2 cup milk
1 cup blueberries fresh or frozen

1. Preheat oven to 400 degrees.
2. Mix dry ingredients. In a medium bowl whisk oil, egg, and milk. Stir in dry ingredients until just blended. Do not overmix. Stir in blueberries.
3. Fill greased muffin tin cups 3/4 full. Top each with additional blueberries and a pinch of sugar.
4. Bake for 20-25 minutes.
