Blueberry Muffins

sugar |

baking powder |

salt |
|
| 1/4 cup |
oil |

egg |

| 1/2 cup |
milk |

blueberries |
fresh or frozen |

Preheat oven to 400 degrees. |

Mix dry ingredients. In a medium bowl whisk oil, egg, and milk. Stir in dry ingredients until just blended. Do not overmix. Stir in blueberries. |

Fill greased muffin tin cups 3/4 full. Top each with additional blueberries and a pinch of sugar. |

Bake for 20-25 minutes. |
