Chili Cheddar Pie

30 minutes prep / 30 minutes cooking
serves 8

1 pound ground beef
1 large onions, chopped
2 cloves garlic, minced
1 28 oz can tomatoes
1 15 oz cans kidney beans, with juice
1.25 cups cornmeal
1 cup grated cheddar cheese
2 tablespoons chili powder
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper
1/2 teasppoon pepper
1.25 cups milk
2 eggs slightly beaten

1. Saute beef, onion and garlic until brown. Drain off fat. Add tomatoes, beans and juice, .75 cups of cornmeal, ,5 cups of cheese and spices. Mix and cook over low heat for 15 minutes. Pour into a casserole dish.
2. In the same pan, combine the milk, .5 cups of cornmeal and salt and pepper to taste. Stir over low heat until the mixture thickens a little. Add the remaining cheese and the eggs stirring until smooth. Pour over the gound beef mixture.
3. Bake uncovered at 375 degrees for 30 minutes.
