Yum! These were tasty. I think I must have cut them a little too big - it took me about 45 minutes of baking and would have been even better if I had let them go further and get all caramelized and chewy on the outside. Super easy recipe!!

Baked Sweet Potato Wedges

10 minutes prep / 30 minutes cooking
serves 4

2 large sweet potatoes or yams
2 tablespoons olive oil
1/2 teaspoon salt
0.16 teaspoon pepper
1.25 cup orange juice
1/2 tablespoons honey
2 teaspoon chili powder

1. Preheat oven to 450 degrees. Cut each potato into 1-inch wedges. Place in a large plastic bag. Add olive oil and toss until coated.
2. In a small bowl mix the orange juice, honey and chili powder.
3. Arrange wedges in a 13X9X2 inch pan lined with foil. Sprinkle with salt and pepper. Bake uncovered for 30 minutes, brushing 3 times with the orange juice mixture.
