Fish Salad

15 minutes prep
serves 2

Fish Salad
1 fish steak grilled and cooled (I used swordfish, but tuna or salmon would also be good)
1 can white beans well rinsed and drained
1/4 cup extra-virgin olive oil
juice of one lemon
onions or shallots minced
fresh herbs minced (I used parsley, mint, basil)
salt and pepper to taste

1. Dice the fish into half inch cubes. Toss it with the remaining ingredients. Adjust ingredients to taste.
2. Serve over greens, in a pita, or over greens in a pita!
