Chocolate Beet Cake

| 1.25 to 1.5 cups |
beets |
cooked and pureed |
| 1.75 cups |
flour |

| 1.5 tsp |
baking soda |

| 1/2 tsp |
salt |

| 3 oz |
unsweetened chocolate |

eggs |
|
| 1.5 cups |
sugar |

| 1 cup |
oil |
tasteless (such as corn or canola) |

vanilla |

Cook and puree the beets. |

Melt the chocolate and let cool. |

Mix the eggs, sugar, oil, and vanilla. Beat. Mix in the chocolate and the beets. Sift dry ingredients and stir in. |

Bake for 35 minutes at 350 degrees in two greased and floured circular cake pans (8 or 9 inch). |

Let cool 20 minutes before taking out of pans. Frost as desired (suggested: Chocolate Buttercream Frosting). |
