Chocolate Beet Cake

Chocolate Beet Cake
1.25 to 1.5 cups beets cooked and pureed
1.75 cups flour
1.5 tsp baking soda
1/2 tsp salt
3 oz unsweetened chocolate
3 large eggs
1.5 cups sugar
1 cup oil tasteless (such as corn or canola)
1 tsp vanilla

1. Cook and puree the beets.
2. Melt the chocolate and let cool.
3. Mix the eggs, sugar, oil, and vanilla. Beat. Mix in the chocolate and the beets. Sift dry ingredients and stir in.
4. Bake for 35 minutes at 350 degrees in two greased and floured circular cake pans (8 or 9 inch).
5. Let cool 20 minutes before taking out of pans. Frost as desired (suggested: Chocolate Buttercream Frosting).
