Pecan Butter Balls

20 min prep / ~ 1 hour cooking

16 tbsp unsalted butter softened
0.33 cup granulated sugar
1/2 tsp salt
1 tsp vanilla
1 tbsp water (or dark rum, bourbon, or brandy)
2 cups flour
8 oz. pecan pieces finely chopped
1 cup confectioner's sugar

1. Preheat oven to 325.
2. Beat together the butter, granulated sugar, and salt until soft and fairly light, about 3 min. Beat in the vanilla and water and beat until smooth. Stir in the flour and pecans until dough holds together.
3. Take teaspoons of dough and roll into balls. Place on baking sheet 2 inches apart.
4. Bake for 15 to 20 minutes until firm and golden. Cool. Once cool, roll in confectioner's sugar.
