Pecan Butter Balls

granulated sugar |

vanilla |

(or dark rum, bourbon, or brandy) |

pecan pieces |
finely chopped |

confectioner's sugar |

Preheat oven to 325. |

Beat together the butter, granulated sugar, and salt until soft and fairly light, about 3 min. Beat in the vanilla and water and beat until smooth. Stir in the flour and pecans until dough holds together. |

Take teaspoons of dough and roll into balls. Place on baking sheet 2 inches apart. |

Bake for 15 to 20 minutes until firm and golden. Cool. Once cool, roll in confectioner's sugar. |
