my grandmother used to make thse with leftover mac and cheese for our after-school snacks. they were delicious. sometimes she would add chopped bits of hot dogs to it too.

Fried Mac and Cheese

15 minutes. prep / 10 minutes cooking
serves 3

leftover Mac and Cheese refridgerated
1 cup flour
2 eggs beaten
1 cup bread crumbs
salt and pepper
oil I used canola

1. Put the flour, eggs, and bread crumbs in separate bowls or plates. Season the flour with salt, pepper, and any other spices you'd like.
2. Scoop out balls of mac and cheese. Roll each one in flour, then egg, then bread crumbs. Set each one on a rack to set.
3. Fill a deep skillet with 1-2 inches of oil. Heat over medium-high heat. Fry the mac and cheese balls until browned on all sides.
4. Set the mac and cheese balls on a rack or paper towels to drain. Let sit a few minutes. Serve with marinara sauce.
