Basic Beets

1. Unless you are grating them for a salad, you need to cook beets before using them in most recipes. Perhaps the tastiest way is to wrap them in foil and roast in the oven (or on the grill) for about an hour. Alternatively, you can boil them on the stovetop for about 40 minutes. However, who wants to wait that long and heat up the kitchen in the summer? Therefore, my new favorite is:
2. MICROWAVE them! Just place washed beets in a dish, add 1/4 cup of water, and cover. Then heat for 10 minutes and they're done! Then peel and slice to use in salad, risotto, pickled beets, or anything else you can think of!
