| 1 medium | onion | thinly sliced |
| 1 medium | green or red pepper | thinly sliced |
| 1 cup | mushrooms | sliced |
| 2 cloves | garlic | minced |
| 2 medium | zucchini | cut into 1/2 |
| 2 tablespoons | extra-virgin olive oil | |
| 1 | boneless, skinless chicken breasts | cut into 1 |
| 3/4 pound | Italian sausage links | cut into 1/2 inch pieces |
| 2 14.5 oz cans | diced tomatoes undrained | |
| 3/4 teaspoon | dried basil | |
| 3/4 teaspoon | dried oregano | |
| cooked rice or pasta |
| 1. | In a large skillet, saute the onion, pepper, mushrooms and garlic in olive oil until just tender. Remove from pan. |
| 2. | Add chicken and sausage to skillet; cook until no longer pink. Drain grease. |
| 3. | Stir in tomatoes and spices. Return vegetables to pan. Bring to a boil; reduce heat and simmer 10 minutes. Serve over hot cooked rice or pasta. |
