Chicken and Sausage Skillet

serves 4-6

Chicken and Sausage Skillet
1 medium onion thinly sliced
1 medium green or red pepper thinly sliced
1 cup mushrooms sliced
2 cloves garlic minced
2 medium zucchini cut into 1/2
2 tablespoons extra-virgin olive oil
1 boneless, skinless chicken breasts cut into 1
3/4 pound Italian sausage links cut into 1/2 inch pieces
2 14.5 oz cans diced tomatoes undrained
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
cooked rice or pasta

1. In a large skillet, saute the onion, pepper, mushrooms and garlic in olive oil until just tender. Remove from pan.
2. Add chicken and sausage to skillet; cook until no longer pink. Drain grease.
3. Stir in tomatoes and spices. Return vegetables to pan. Bring to a boil; reduce heat and simmer 10 minutes. Serve over hot cooked rice or pasta.
