African Pineapple Peanut Stew

serves 4

1 cup onion chopped
2 cloves garlic minced
1 tbsp olive oil
20 oz can crushed pineapple undrained
4 cups kale sliced into 1" strips
1/2 cup peanut butter
1 tbsp tabasco sauce
1/2 cup cilantro

1. Saute onions inoil until slightly browned. Add garlic and saute one minute.
2. Add the pineapple with juice and bring to a simmer. Stir in the kale and simmer for about 5 minutes until just tender.
3. Mix in the peanut butter, tabasco sauce, and cilantro. Simmer 5 minutes.
4. Add salt to taste and serve.
