African Pineapple Peanut Stew

onion |
chopped |
| 2 cloves |
garlic |
minced |
| 1 tbsp |
olive oil |

| 20 oz can |
crushed pineapple |
undrained |
| 4 cups |
kale |
sliced into 1" strips |
| 1/2 cup |
peanut butter |

tabasco sauce |

| 1/2 cup |
cilantro |

Saute onions inoil until slightly browned. Add garlic and saute one minute. |

Add the pineapple with juice and bring to a simmer. Stir in the kale and simmer for about 5 minutes until just tender. |

Mix in the peanut butter, tabasco sauce, and cilantro. Simmer 5 minutes. |

Add salt to taste and serve. |
