Roast Turkey

Roast Turkey
1 turkey 12-14 lbs
salt
pepper
fresh herbs optional
butter optional
stuffing

1. The night before, remove the gizzards and neck from the cavity and reserve for use in the stuffing. Wash out the cavity by rinsing with cold water. Sprinkle the cavity with salt and pepper. Return to fridge.
2. Stuff the cavity with stuffing. Sprinkle the bird with salt and pepper. If desired push butter and/or herbs under the skin, being careful not to puncture the skin.
3. Place in a roasting pan. Cover the breast with foil so it does not cook too quickly. Bake in the oven at 350 until a meat thermometer registers 165. This should take about 3.5 hours. Baste every half hour. When the turkey is almost done, remove the foil so it can brown.
