Applesauce

serves 4

Applesauce
8 or more apples best if you use 2 different kinds
1/4 cup water
1 cinnamon stick or 1 tsp powdered cinnamon
1/2 cup sugar

1. Core and quarter the apples. Place in a pot with the water and the cinnamon stick. Cover and simmer over low heat for 30 minutes. Stir once halfway through.
2. Remove the cinnamon stick. If you have a food mill, run the apples through it to separate the skins. Otherwise, mash the apples and strain them to separate the skins.
3. Add the sugar a little bit at a time while tasting until it's the desired sweetness. If you're using powdered cinnamon, add it now, to taste.
