| 8 or more | apples | best if you use 2 different kinds |
| 1/4 cup | water | |
| 1 | cinnamon stick | or 1 tsp powdered cinnamon |
| 1/2 cup | sugar |
| 1. | Core and quarter the apples. Place in a pot with the water and the cinnamon stick. Cover and simmer over low heat for 30 minutes. Stir once halfway through. |
| 2. | Remove the cinnamon stick. If you have a food mill, run the apples through it to separate the skins. Otherwise, mash the apples and strain them to separate the skins. |
| 3. | Add the sugar a little bit at a time while tasting until it's the desired sweetness. If you're using powdered cinnamon, add it now, to taste. |
