Orzo with tomatoes and corn

20 minutes prep

Orzo with tomatoes and corn
2 tablespoons olive oil
1 cup green onions sliced
2 teaspoons garlic minced
1 cup uncooked orzo
1 cup corn juice with water added
1.25 cups tomato juice
1/2 cup tomatoes diced
1 11 oz can corn
2 tablespoons fresh cilantro chopped
salt and pepper to taste

1. Drain corn. Reserve juice and add water to make 1 cup.
2. Saute onions and garlic in olive oil for 1 minute. Add orzo, corn juice and tomato juice. Cover and simmer for 10 minutes. Stirring frequently.
3. Add corn, tomatoes and cilantro. Season to taste.
4. Serve topped with baked or broiled fish such as scrod, flounder, or taliapia.
