| 2 tablespoons | olive oil | |
| 1 cup | green onions | sliced |
| 2 teaspoons | garlic | minced |
| 1 cup | uncooked orzo | |
| 1 cup | corn juice with water added | |
| 1.25 cups | tomato juice | |
| 1/2 cup | tomatoes | diced |
| 1 11 oz can | corn | |
| 2 tablespoons | fresh cilantro | chopped |
| salt and pepper | to taste |
| 1. | Drain corn. Reserve juice and add water to make 1 cup. |
| 2. | Saute onions and garlic in olive oil for 1 minute. Add orzo, corn juice and tomato juice. Cover and simmer for 10 minutes. Stirring frequently. |
| 3. | Add corn, tomatoes and cilantro. Season to taste. |
| 4. | Serve topped with baked or broiled fish such as scrod, flounder, or taliapia. |
