Pasta with Sausage, Peppers, and Onions

30 minutes prep / 20 minutes cooking
serves 4

1 lb Italian sausage hot or sweet or both
1 large green bell pepper sliced into 1" strips
1 large red bell pepper sliced into 1" strips
1 large onion sliced
4 cloves garlic chopped
1 lb pasta
1 28 oz can whole peeled tomatoes

1. In a large skillet, saute the peppers, onions, and garlic in olive oil. Meanwhile, remove casings and break up the sausage into 1 inch pieces. Cook in a separate skillet over medium high heat until brown on all sides. Remove sausage from heat.
2. When the veggies are soft, add the tomatoes with their juice, breaking them up with your hands. Reduce heat so it's at a simmer. After a few minutes add the sausage to the skillet. Cook for 15-20 minutes until the tomatoes breakup and are saucy.
3. Bring a pot of water to a boil and cook the pasta until al dente. Drain and add the pepper-tomato-sausage mixture.
4. Serve.
